Tomato and Mozzarella Salad

  • 1 pint cherry tomatoes, cut in half

  • 6 ounces mozzarella cheese, ripped into small pieces

  • 3 ounces parmesan reggiano, grated

  • 6 basil leaves, ripped into small pieces

  • 2 tablespoons extra virgin olive oil

1) Grind salt and pepper into a bowl with the cherry tomatoes and olive oil. Stir together and let sit for fifteen minutes

2) Add cheese and basil. Stir again, put more salt and pepper if needed. That’s it
