Schnitzel Katsudon
Leftover schnitzel
1 cup cooked rice from rice cooker
2 eggs, whisked
½ white onion, sliced into half rings
2⁄3 cup dashi stock
2 tablespoon soy sauce
2 tablespoon mirin
2 tablespoon sake
1 tablespoon brown sugar
1) Combine dashi, soy sauce, mirin, sake and brown sugar together in a bowl
2) Put the mixture in a small skillet that fits the schnitzel. Add the onion as well and turn to high heat. Once boiling, turn it low enough so it just simmers for five minutes with no lid.
2) Add one leftover schnitzel on top and pour the egg evenly around the pan. Put a lid on it and let it cook until the eggs are how you like, usually about 90 seconds is good for me but just watch it and see.
3) Have your rice in a bowl and slide everything from your skillet on top of the rice.
