Chimichurri Sauce

  • 1 cup fresh parsley

  • 2 tablespoons dried herbs de provence

  • 4 cloves of garlic

  • 2 tablespoons red wine vinegar

  • a couple shakes of red pepper flakes

  • a couple shakes of smoked paprika

  • ¾ cup of extra virgin olive oil

Put everything in a food processor except the olive oil. Process it until smooth. Combine everything from the food processor in a bowl with the olive oil. Mix it together and add some salt and pepper. Let this sit a couple hours before you use it but use it now if you forgot to do it in advance.

Put it on almost anything; steak, chicken, shrimp, eggs, your third wife, toasted bread, empanadas and burgers all go good with chimichurri.
