Hurricane Recipe: White Bean, Artichoke & Heart of Palm Salad
This week I will be focusing on food you can prepare during a hurricane while I sit in the darkness waiting for the lights to come back on.
1 can of artichoke hearts, drained and quartered
1 jar of heart of palm, drained and sliced
1 can of cannellini beans, drained and rinsed
½ cup extra virgin olive oil
¼ cup lemon juice
1 tablespoon grainy mustard
1 teaspoon honey
1 teaspoon herbs de provence
1) Whisk the last five ingredients together with salt and pepper to make your dressing.
2) Combine the first three ingredients in a big bowl. Pour the dressing over the top and toss it around. Eat at room temperature.
