Keto Muffin Tin Omelets
2 tablespoons melted unsalted butter
10 large eggs, beaten
4 strips of cooked bacon, chopped
half of a diced green bell peppers
6 ounces of your favorite sharp cheese, shredded (I use a cheddar cheese with caramelized onions but if you hate this cheese please just use a different one)
1/4 cup scallions, chopped
1) Preheat the oven to 350 degrees
2) Melt your butter and rub it all inside the muffin tin..uhh..holes
3) Season your eggs with salt and pepper. Mix in the bacon, bell pepper, cheese and scallions. Pour the egg mixture equally into all the holes
4) Bake for 20 minutes, unless your eggs aren’t done cooking then cook them until the are done
