Fried Rice Cakes
2 cups white rice, leftover or fresh as long as moisture is low
2 tablespoons butter
3 eggs, whisked
8 ounces bell pepper, diced
2 tablespoons low sodium soy sauce
1 cup extra sharp cheddar cheese, shredded
2 tablespoons shichimi or Japanese Seven Spice
1) Combine all the ingredients together, except the butter, in a bowl with salt and pepper
2) Over medium heat, melt the butter in a skillet
3) Use a large serving spoon (you should get about five equal portions out of this amount), place a scoop of the egg and rice mixture in the pan. Roughly form it into a patty shape with the spoon approximately a half an inch thick. Cook until the bottom is golden brown, you will be able to flip the patty easily once it’s ready, about four minutes each side
4) Serve with hot sauce or a dipping sauce of whisked together soy sauce, sesame oil, and rice vinegar
