Cilantro Lime Chickpeas

  • 2 cups chickpeas

  • 2 cups spinach

  • ¼ cup sweet onion, diced

  • 2 limes, juiced

  • 2 tablespoons dijon mustard

  • 1 cup fresh cilantro

  • 2 garlic cloves, minced

  • 4 tablespoons extra virgin olive oil

  • 1 teaspoon cumin

1) Pulse the spinach and cilantro in a food processor until fine. Add the spinach and cilantro to a large bowl with the chickpeas and onions

2) Add the lime juice, dijon mustard, garlic, olive oil and cumin to the food processor. Puree until all the things become one thing

3) Pour the dressing you just made over the chickpea mixture and stir. Let it sit as long as you can so the flavors get to know each other or whatever. Eat it over rice or in a pita
