Chicken Drumsticks in Vinegar and Soy Sauce
10 chicken drumsticks
½ cup low sodium soy sauce
½ cup apple cider vinegar
8 cloves of garlic, minced
5 bay leaves
1 jalapeno, chopped
2 tablespoons japanese seven spice blend (includes red pepper, sichuan pepper, ginger, white and black sesame seeds, orange peel and nori flakes)
1) Marinate the chicken with the soy sauce, vinegar, garlic, jalapeño and japanese seven spice overnight
2) Transfer the chicken and it’s marinade to a skillet. Add the bay leaves and a half a cup of water over medium low heat. Cover with a lid and let cook for 45 minutes
3) Remove the lid let it cook another 15 minutes so some of the liquid evaporates
4) Throw those bay leaves in the garbage and eat this with some rice
