6 oz smoked salmon (use what you like, I use Trader Joe’s Everything But The Bagel Seasoned smoked salmon)
7 oz arugula lettuce
⅓ cup goat cheese, crumbled
⅓ cup lemon juice
⅔ cup extra virgin olive oil
1 tablespoon herbs de provence
2 tablespoons sunflower seeds
1) Slowly pour the olive oil into the lemon juice and whisk until combined. Add the herbs de provence and add salt and pepper to taste.
2) Drizzle the vinaigrette you just made onto the arugula and sunflower seeds. Use less than you think, then toss the salad so the dressing covers all of the arugula. If you think it needs a little more dressing, use a little more then store the rest in your fridge for your next salad.
3) Top the salad with your smoked salmon pieces and crumbles of goat cheese.
