Sirloin Tip Steak in Tomatoes and Onions
1½ pound sirloin tip steak, sliced thin
1 medium white onion, sliced thin into half moons
2 medium tomatoes, sliced thin
cumin and garlic powder to taste (I’d say a little more cumin than garlic powder)
¼ cup of chicken broth or water if you forgot to buy chicken broth but try to remember
1) Heat a large frying pan on medium high with two tablespoons of olive oil
2) Season steak with cumin and garlic powder
3) Cook the steak about thirty seconds a side and set aside
4) Reduce the heat to medium and add two more tablespoons of olive oil
5) Add the onions for a total of two minutes, flipping so they don’t burn
6) Add the slices of tomatoes on top with salt and pepper and more garlic powder and cumin
7) Turn the burner to medium low and add the chicken broth. Once it boils turn the heat to low and let it simmer for like two minutes
8) Return beef to pan and mix it up! Take it off the heat and serve this over rice. It’s bonus good if you add a fried egg to the top.
