Hot Sauce Soup
1 pound ground beef
4 cups sweet potatoes, cubed
1 sweet onion, chopped
5 tablespoons vinegar based hot sauce (I like Gator Sauce)
28 oz. tomato sauce
4 cups unsalted chicken broth
1 tablespoon cumin
1 tablespoon smoked paprika
1 bay leaf
1) In a pot sized big enough to fit these things, add extra virgin oil olive over medium heat. Add the ground beef with salt and pepper and cook until it’s no longer pink. If you bought ground beef that has a lot of fat, drain that out.
2) Add the cumin and smoked paprika and stir. Then add the sweet potatoes, onion and hot sauce. Stir so it’s combined. Next, add the tomato sauce, chicken broth and bay leaf and turn the heat to high. Once it boils, lower the heat so the soup just simmers.
3) Let it cook with a lid on for one hour or until the sweet potatoes become tender. Take the bay leaf out and eat it.
