Braised Green Beans in Tomato Sauce
1 medium sweet onion
5 cloves of garlic, diced
pinch of red pepper flakes
28 ounce can of diced tomatoes
1 pound of green beans without the stems
1 tablespoon herbs de provence
1⁄2 teaspoon nutmeg
2 tablespoons fresh parsley, chopped
4 ounces feta, crumbled
1) Add the onions to a sauce pan over medium heat with a few tablespoons of extra virgin olive oil. Cook for about five minutes stirring every couple minutes until the onions start getting some color on them
2) Add the garlic and red pepper flakes then saute for another minute, continuing to stir
3) Add the tomatoes, green beans, herbs de provence, nutmeg and salt and pepper. Bring to a boil and then turn the heat down to a simmer for 40 minutes until the beans are soft
4) Remove from the heat, mix in the parsley and top with the feta cheese
